Halušky Potato Dumplings

Ingredients
  

  • 14 Ounces Peeled, Boiled & Mashed Potatoes 2 Cups
  • 10 Ounces Flour 2 Cups
  • 4 Ounces Whole Milk 1/2 Cup
  • 4 Large Eggs
  • 1 1/2 Teaspoons Salt
  • 2 Whole Cloves Garlic Pressed
  • 2 Sausages Cubed
  • 1/2 Cup Bacon Bits
  • 1 Cup Sauerkraut
  • 1/3 Cup Goat or Blue Cheese
  • 1/3 Cup Monetary Jack Cheese
  • Additional ingredients:
  • 2 Sausages Cubed
  • 1/2 cup Bacon Bits
  • 1 cup Sauerkraut
  • 1/3 cup Goat or Blue Cheese

Instructions
 

  • Mix together your dumpling ingredients. Once mixed, the batter should be stringy. You can purchase a spaetzle grater, food mill, or use a grill sheet pan that has holes in it, the size of a pencil eraser.
  • Bring a large pot of water to boil. Place your sheet pan or spaetzle grate over a pot of boiling water and pour the batter over the grate, pressing it through the holes. The batter will drop into the pot below, creating the perfect sized noodles.
  • Let them boil until they begin to float to the surface. Strain the noodles and rinse well with cold water. Let the noodles rest while you prep your sausage and bacon.
  • When ready, heat your pan with a tablespoon of oil and add the noodles. Stir to prevent noodles from sticking to the pan. As the noodles begin to brown, add the sauerkraut, bacon and sausage. Cook until combined, remove from heat and mix in your cheese.
