First start by prepping your chicken. Remove the neck and gizzards, retaining them for later use if desired. As they are great from making chicken gravy or stock.
In a small bowl combine the salt, garlic powder, paprika and pepper.
Evenly lather the chicken inside and out with the prepared seasoning mixture.
Stuff the garlic cloves and onions inside the chicken.
Place the chicken breast side up inside the fryer basket.
Cook the chicken for 20 minutes at 360 degrees. After the 20 minutes, flip the chicken over and cook for 20 minutes more to cook and crisp the underside.
Remove from fryer. Let the chicken rest for 10 Minutes after cooking, before you cut and serve. Cutting too soon will cause the juices to run all over the cutting board instead of being obsorbed by the meat.
The onion and garlic that was placed inside the chicken was used for aromatics, but will be fully cooked, and is safe to be consumed.
Notes
If desired, potatoes can be sliced and placed around the chicken, and cooked at the same time. Depending on the thickness of the potatoes, They will need 20-30 minutes to cook fully.
