Wash potatoes to remove dirt. Cut potatoes into wedges or fries. Place the potatoes on a towel to remove excess moisture, then place on a parchment lined baking sheet. Pour the oil over the potatoes, season with salt, and coat with 1/2 cup bread crumbs. Toss the potatoes in the bread crumbs to coat. Evenly space the wedges across the baking sheet, then pour the remaining half cup bread crumbs evenly over the top of the potatoes. Dust with grated parmesan cheese and place in the oven to bake.
