Bacon and Egg Breakfast Sandwiches

There are times when you want a hot breakfast, but don’t want to go through the hassle of making a mess in the kitchen.  This was one of those mornings.  These breakfast sandwiches not only taste great, but they are less messy to cook and eat.  Have you ever made breakfast sandwiches on a bun and had the filling fall out the back end of the bun, creating a mess?  With these sandwiches you don’t have to worry about a thing.

 

Here is what you need:

Keizer Rolls

1 Egg per Sandwich

Shredded Cheese of Choice ( I Used Mozzarella)

Cooked Bacon or Ham

Salt, Pepper and Italian Parsley to Taste

 

Cut your Keizer rolls 3/4 of the way from the top of the bun.  This will create a lid for your sandwich and enough space to fill the roll with egg, cheese and meat.  Remove the top from the roll, and using a biscuit cutter, press it into the roll to create a bowl.  Don’t press the cutter all the way to the bottom of the roll.  You want to leave a strong enough bottom to hold the filling.  Remove the center from the roll within the biscuit cutter leaving some dough on the bottom.  Remove the cutter and press the remaining bread on the bottom to pack it down.  IMG_9889

Place your ham or bacon on the bottom of the bowl you created with the biscuit cutter.  placing it on the bottom will prevent the egg from eating through the bun and making it soggy. IMG_9888 Next, crack an egg over the top of your meat.

Preheat your oven to 350 degrees.  Lightly apply seasoning over the top of the egg. Cover with shredded cheese and place the lid to your sandwich on top.  Be careful not to overfill the roll with cheese.  Believe me, I know it will be tempting, but even a little bit of cheese will be enough.  It will create a big mess if you add too much and it overflows while cooking.

IMG_9905 Wrap your rolls in foil to contain the heat while cooking.  Place the rolls in the oven and bake for about 13-20 minutes. My hubby likes his egg to be runny, so you can cook them less if you enjoy a more juicy sandwich.

These beauties are tasty enough on their own, but I prefer to remove the lid after cooking and add Italian leaf parsley.  I also like the lather a good layer of blue cheese dressing on the lid to add a little more bite.  If you prefer the non-moldy variety of sauces, you could opt for mayo or miracle whip.  Either will add great flavor.
