Simple Frittata

So, fortunately or unfortunately for you, I have begun my quest towards being healthy and discovering a new relationship with healthy food. image

Since the birth of my second child, I have decided it is time to focus on what I put in my body and adding daily exercise to my routine. So far it has worked well. I have been eating healthy and working out daily for 28 days straight. Since I like the way I feel, I don’t see any reason in going back to my old habits.

One of the many new habits I have developed is meal prep. I prep my meals once a week (usually Sundays) for the whole week. Not only does it save time and money, it also prevents me from picking up a asiago cheese bagel on the run or the not so good for me doughnuts or pizza that can usually be found on the break table at work.

Here is an easy idea for your breakfast, make a frittata! Take whatever vegetable you have in your fridge, cook it first, then place it in a mould of some kind, and pour pre-seasoned scrambled eggs over the top! If you are on the 21 day fix meal plan as I am currently, this recipe will cover 1 of your vegetable servings and a protein.  If you really want to get creative, throw in some cooked ground turkey or turkey bacon. I prefer to save my blue container (healthy fats) for my last meal of the day, but if you like you can throw in some cheese. I would rather season mine with  Himalayan salt and Sriracha. 10 medium eggs

2 1/2 cups cooked diced vegetable(s) of choice ( I used broccoli)

salt and pepper to taste
