Whipped Ricotta

Light and airy ricotta with a refreshing taste of sweet peas and mint.

Whipped Ricotta

  • 1 Cup Ricotta Cheese
  • 1/2 Cup Fresh or Preciously Frozen Sweet Peas
  • 1/4 Cup Heavy cream
  • 1/2 Teaspoon Fresh Lemon Juice
  • 1/4 Oz Fresh Mint Leaves (stems Removed)
  • 1/4 Oz Fresh Parsley
  • 1/4 Teaspoon Salt (Or To Your Taste
  • Pomegranates For Garnish


  • Place the peas, mint, and parsley in a food processor, chop finely, and set aside.
  • Using a stand or hand mixer, whip the heavy cream until thick and fluffy (don’t over whip).
  • Add the ricotta and lemon juice to the whipped cream. Whip to combine.
  • 4. Gently fold the pea mixture into the whipped ricotta, and season with salt.
