Whipped Ricotta
Ingredients
- 1 Cup Ricotta Cheese
- 1/2 Cup Fresh or Preciously Frozen Sweet Peas
- 1/4 Cup Heavy cream
- 1/2 Teaspoon Fresh Lemon Juice
- 1/4 Oz Fresh Mint Leaves (stems Removed)
- 1/4 Oz Fresh Parsley
- 1/4 Teaspoon Salt (Or To Your Taste
- Pomegranates For Garnish
Instructions
- Place the peas, mint, and parsley in a food processor, chop finely, and set aside.
- Using a stand or hand mixer, whip the heavy cream until thick and fluffy (don’t over whip).
- Add the ricotta and lemon juice to the whipped cream. Whip to combine.
- 4. Gently fold the pea mixture into the whipped ricotta, and season with salt.
