Brown Sugar Milk Tea

Brown sugar sweetened black tea served over ice with milk and brown sugar boba pearls.

Ingredients
  

  • 4 black tea bags
  • 1 cup hot water
  • 1 cup black tapioca pearls
  • 2 cups water
  • 1 cup dark brown sugar
  • 4 cups milk or milk alternative

Instructions
 

  • Steep the tea bags in one cup hot water while you prepare the tapioca pearls.
  • In a saucepan, simmer the tapioca pearls in two cups water, until pearls float to the surface, then strain off excess water.
  • In the same saucepan, combine the brown sugar and steeped tea with the cooked and strained tapioca pearls. Bring to a boil, then reduce to a simmer for 15 minutes.
  • Divide the tapioca and syrup between 4 glasses. Tilt the glass to coat the sides with syrup, then pour one cup of milk into the glass.
  • Best when served over ice,

Notes

Prepared tapioca pearls do not hold well next day and should not be refrigerated after being cooked or they will harden.  Once prepared, serve and enjoy.
