Quick Pickled Onions

Ingredients
  

  • 1 red onion lyonnaise cut
  • 1 sprig rosemary
  • ¼ teaspoon lemon zest
  • ¾ cup water
  • ½ cup apple cider vinegar
  • ¼ cup sugar
  • 2 cloves garlic slivered
  • ¼ teaspoon coriander seed
  • ¼ teaspoon mustard seed
  • ¼ teaspoon peppercorns

Instructions
 

  • Place the onions and rosemary into a pint sized jar or non-reactive container.
  • In a saucepan, combine the water, vinegar, sugar, garlic, coriander, mustard, peppercorns and lemon zest. Bring to a simmer over moderate heat to dissolve the sugar.
  • Once the sugar is dissolved, remove from heat. let cool fully prior to pouring liquid over the onions. Onions will be ready for consumption in 24 hours. Store in an air-tight container with a lid. Pickled onions can be stored for up to a month in the refrigerator.
