Churro Waffles

Crispy, cinnamon sugar coated, waffles. Crisped in the waffle iron instead of being fried in oil. Less fat and less mess, same delicious taste.

Ingredients
  

Waffle

  • 5 Ounces Flour 1 Cup
  • 1/2 Teaspoon Baking Powder
  • 1 Large Egg
  • 1 Teaspoon Vanilla Extract
  • 2 Fl. Ounces Melted Butter Or Neutral Flavored Oil 1/4 Cup
  • 2 Fl. Ounces Milk 1/4 Cup
  • 2 Tablespoons Sugar

Cinnamon Sugar Coating

  • 1/4 Cup Granulated Sugar
  • 1/4 Teaspoon Ground Cinnamon

Chocolate Dipping Sauce

  • 1 Tablespoon Coconut oil
  • 6 Ounces Chocolate Chips 1 Cup

Instructions
 

  • Measure and sift together the flour and baking powder into a bowl and set aside.
  • In a separate bowl, melt the butter, and combine with the sugar, milk, and vanilla, then gently beat in the egg.
  • While mixing on low, slowly add the flour mixture with the butter mixture, until fully combined and no flour clumps remain.
  • Pre-heat a waffle iron. Once heated, open the waffle iron. With a spoon, scoop out 1/2 of the batter from the bowl, placing it onto center of the waffle iron's inner lower surface. If you have a smaller than average waffle iron, be mindful not to over-fill. Use less batter if needed. Close the waffle iron, pressing down firmly on the lid for three seconds (being careful to not burn yourself) to spread the batter evenly over the inner surface of the waffle iron, then release.
  • Let the waffle cook for 2-3 Minutes or until golden brown. Check the waffle at the two minute mark. Cook longer if needed to reach desired golden color. If the waffle is sticking to the inner surface of the waffle iron, brush the surface with oil before cooking the second waffle.
  • While the waffle cooks, combine the cinnamon with the sugar to create the cinnamon sugar coating. Pour the mixture on a plate, or into a shaker to coat the waffles once they are fully cooked. Toss the cooked waffle in the sugar to coat, or sprinkle with cinnamon sugar using a shaker.
  • Coat the waffles in cinnamon sugar immediately after removing from the waffle iron. If you let the waffle cool too much before coating, and the sugar no longer sticks to the waffle, don't fret. simply brush the waffle with a little oil and re-dust with sugar.
  • This recipe can be doubled to feed a larger crowd.
