I promise you this wrap is more tasty than you could ever imagine, and it’s healthy too! A great thing about cabbage is it’s a very durable vegetable that will not get soggy or wilt if you plan to use this recipe in your weekly meal prep. If you do plan to do so, you will have to follow the directions on how to prep the wrap to prevent it from going soggy.
Here is what you will need per wrap:
1 wheat wrap or far out flax wrap
2 Tbs soft, spreadable goat cheese
2 Tbs plain Greek yogurt
1-2 Tbs cranberry sauce or jelly
1 cup shredded coleslaw mix or shredded cabbage and carrots. *one green container
1/2 cup sliced deli turkey *one red container
Start by spreading a thin layer of goat cheese over the complete surface of the wheat wrap.
The goat cheese has enough fat in it to create a moisture barrier for the wrap.
Next, spread the cranberry over the cheese, add the yogurt. covering the yogurt as best you can with turkey to create a barrier between the yogurt and the cabbage. This will prolong the life of the cabbage.
Place your cabbage and carrots over the turkey and roll up your wrap.
I wrapped mine in parchment paper to store instead of plastic wrap because the plastic would trap moisture and make the wrap soggy on the outside. The paper prevents it from drying out in the refrigerator.
Store in the refrigerator until you are ready to eat.
