A spicy spin on a traditional American breakfast food, biscuits and gravy. This slightly sweet sausage and mushroom gravy has a spicy kick from chorizo sausage. It’s so universal, you could have it for breakfast, lunch or dinner!
Chorizo Sausage Gravy
Ingredients
- 1 Cup Diced Mushrooms
- 1 Pound Ground Mild Breakfast Sausage
- 9 Ounce Pork Chorizo Sausage (I used El Mexicano brand)
- 3 Cups Chicken Or Vegetable Broth
- 1 Cup Heavy Cream
- 3/4 Cup Flour
- 2 Tablespoons Sugar
Instructions
- Sauté your mushrooms in oil or butter until browned. Place the cooked mushrooms into a large sauce pan or stock pot that can hold all the ingredients listed above.
- Next cook up your sausage. Both the chorizo and breakfast sausage can be cooked in the same pan. Once the sausage has browned a bit, add it to the mushrooms, already in the pot.
- While still warm, add 1 cup flour to the meat and mushroom mixture. Stir until the flour is fully combined with the meat and no lumps of flour remain. This should create a very thick paste.
- slowly add warm broth to the pot over the meat mixture. Stir frequently with a whisk as the gravy thickens.
